Baklava

  • Syrup
  • 1 cup water
  • 1 cup honey
  • 3/4 cup sugar
  • 1 lemon
  • 1/2 table orange extract
  • cloves
  • fig leaf
  • Nuts
  • Sum to 18oz - pistachios, walnuts, pecans, almonds
  • 1/4 cup sugar
  • 2 table cinnamon
  • pinch ground cloves
  • Pastry
  • 16oz phyllo
  • 2 stick unsalted butter

Notes

Syrup

needs to cool before pouring

dissolve sugar into water

add honey, orange extract, cloves, fig leaf

boil then simmer 25 min

cool to lukewarm

remove cloves, fig, add lemon juice


Nuts

food processor nuts only

hand stir in sugar, cinnamon, cloves


Build

oven 350 deg

melt butter on stove

1/3 phyllo - lightly brush butter every sheet

1/2 nuts

1/3 phyllo - lightly brush butter every sheet

1/2 nuts

1/3 phyllo - lightly brush butter every sheet

cut before baking

bake 35-45 min, check for golden brown and clean skewer

pour cold syrup on hot baklava

wait at least 1 hour before serving
