- brisket - fat trimmed to 1/4" thick

200 deg smoker
mesquite charcoal + oak firewood
first temp check 5 hours
when meat 170 deg take out and wrap in foil
continue until meat 200 deg
wrap in more foil then towels then place in cooler
longer rest better, at least 1 hour
